| Special feature: an Antonio Carluccio recipe |
|
This month we are delighted to present a recipe from "Complete Italian Food" by the renowned chef and restaurateur Antonio Carluccio.
A frequent visitor to Sicily, Antonio has come up with a recipe that in many ways typifies the local food: fresh, locally sourced ingredients whose variety recalls the island's stratified gastronomic history. As Antonio writes, "Sicilian cooking is really quite unique.....Centuries of invasion have exposed the island to a variety of culinary influences, which have enriched the cuisine. Arab and Greek influences are significant and responsible for the introduction of olives, almonds and citrus fruits, for example."

| A great wine for a great recipe.... |

One of the most prestigious and widely respected wine producers in Sicily is without a doubt Planeta. Their Chardonnay 2005, a golden yellow, intensely flavoured wine with hints of peach, black figs and vanilla cream, is an ideal accompaniament to Carluccio's recipe. And if you would really like to taste to believe, during April, Planeta wines will be taking the lead role in the "Festa del Vino" at several Carluccio Caffes.
