Easter 2008 is early - 23rd March. So if it's clement spring weather you're after, the heart of the Mediterranean is what you need. France and Tuscany will still be wintry and cold but Sicily will be experiencing the first tender blushes of Spring with flowers blooming and the interior a luscious shade of green. It is also possibly the best time to tour Sicily's remarkable range of ancient Greek sites and historic cities.

This month's recipe, Spaghetti alla Glassa, is a true Palermitan secret. Only a few traditional trattoria still seem to serve it, and it is virtually impossible to find outside the city's limits. It is a hearty winter pasta, full of warming ingredients and ideally served on a wet, windy, cold evening when staying in a cosy, warm kitchen seems to be the best bet. Serve with a good bottle of robust red wine and dream of warmer days....
