Recipe of the month: Nero di Seppia

This month's recipe is spaghetti with nero di seppia (pieces of cuttlefish cooked in cuttlefish ink), one of the most instantly recognisable of any dishes thanks to its jet black colour. The ink, however, is also extremely tasty and gives a lovely tang to the dish, which is ideally accompanied by a cold bottle of Sicilian white. Recipe > >

Passito di Pantelleria: May's wine of the month

A supreme dessert wine, Passito di Pantelleria is produced from Zibibbo grapes, introduced to the island by the Arabs, who cultivated them to produce raisins (in Arabic, zibibbo means "dried bunch"). After the harvest on 15th August the grapes are laid out to dry in the sun and wind for 3-4 weeks so as to concentrate their sugar levels and aromatic characterstics.  Read more > >

Pantelleria!

Pantelleria, whose name derives from the Arabic "Bint-al Rion" - Daughter of the Wind - is one of Sicily's most characteristic minor islands. Not part of an archipelago like the Egadis or the Aeolians, Pantelleria is considerably closer to North Africa than to Europe. Its rocky coastline, sometimes dramatic, sometimes gentle, extends for just over 31 miles but encapsulates a great deal.

Historically speaking, like most islands in the middle of the Mediterranean, a great many dominating civilisations (including the Phoenicians, the Romans, the Arabs and the Spanish) have come and gone, all leaving their mark in a mesh of interwoven cultures. Read more > >
