As one summer comes to an end, so we start thinking about the next and for those of you whose ideal holiday is spending time with your extended family or with a large group of friends in a villa, then you’ll be sure to find a Think Sicily property that is perfect for you. If there’s one vegetable that you are bound to see a lot of whilst in Sicily it is the aubergine (eggplant). Originally introduced into Sicily by the Arabs, aubergines are to be found in numerous different forms in local specialities, most famously as an essential ingredient of caponata, pasta alla Norma and this month's recipe, Parmigiana . As all those who have rented a villa with us know, before leaving for their holiday, Think Sicily clients receive a pack providing them with useful, practical tips regarding their stay. On its southern side, Palermo is enlcosed by a ring of mountains which give way to the dramatic Valle dello Jato. It is here that the Sicilian hinterland starts which but it is also a gateway to one of the most important wine-producing areas in Sicily. Near the town of Camporeale, nestling in the rolling hills, is the Sallier de la Tour "cantina" otherwise known as Masseria Pernice. The vineyard produces 4 different wines, one of which, the Syrah, is to be our wine of the month.
